Let’s Make Fennel and Orange Salad!

Diet Considerations

Ingredients (Serves 4)

  • 2 small fennel bulbs, finely sliced and outer leaves removed
  • 2 oranges, peeled and sliced
  • 1 red onion, finely sliced
  • some black olives to garnish
  • ¼ cup extra virgin olive oil
  • 2 tablespoon red wine vinegar
  • salt and pepper to taste 


Prep Time: 15 minutes.

Cook Time: 0 minutes.

  1. Wash

    Wash the fennel bulb. Remove the outer layer if it does not appear fresh.

  2. Let stand

    2 Thinly slice the fennel, using a mandolin or a very sharp knife.

  3. Toss!

    Place in a bowl and add the oranges. Toss together.

  4. Make the dressing

    Place the extra virgin olive oil, red wine vinegar, and salt and pepper in a jar. Cover and shake well.

  5. Garnish and serve

    Garnish with black olives. Serve immediately.
