
How To Make Grilled Zucchini Salad
This grilled zucchini salad is a simple recipe but it looks and tastes amazing! It’s perfect for a BBQ, picnic, or a light dinner. You can also add different types of veggies depending on the season, such as asparagus (grilled), green beans (steamed), or raw vegetables like fennel. To garnish, add toasted pine nuts, almonds, or flowers that you have in your garden. Beautiful!

Prep Time: 15 minutes.
Cook Time: 30 minutes.
Slice zucchini thinly lengthwise.
In a pan, grill the zucchini for 4-5 minutes on each side or until they have grill marks.
While waiting for the zucchini to grill, finely chop the basil and mint.
In a bowl, add the extra virgin olive oil, lemon juice, zest, pressed garlic clove, chopped herbs, and salt and pepper.
Place zucchini in a large plate and pour the dressing over it.
Add the other vegetables/nuts of your choice and enjoy!
