Diet Considerations

Ingredients (Serves 4)

  • 200 grams / 7 oz fresh ricotta, the best you can find
  • 200 gr / 8 oz heavy cream
  • 100 gr / 3.5 oz meringues
  • fresh berries from the season or other fresh fruit
  • 30 gr / 1 oz toasted pine nuts or chocolate chips

Directions

Prep Time: 10 minutes.

Cook Time: 20 minutes.

  1. Prepare ricotta

    Beat ricotta in a bowl with an electric mixer until smooth.

  2. Prepare heavy whipped cream

    Pour heavy cream into another bowl and beat on medium speed until stiff peaks form. Test the stiffness by pulling a beater out of the cream – the whipped cream should hold its shape and cling to the beater.

  3. Mix and refrigerate

    Mix the ricotta and cream together and put the mixture into the refrigerator until you are ready to serve.

  4. Final preparation

    Just before serving, break the meringues into the ricotta and cream mixture. Fold them in with a rubber spatula until combined and uniform. Spread the mixture in a serving plate to get the shape you like or serve in individual glasses.

    Note: If you add the meringues in advance, they will get too mushy and you want them crispy!

  5. Serve!

    Sprinkle the berries, toasted pine nuts and/or chocolate, and you are ready to serve!
